Most people eat their tarts chilled, but I actually prefer eating mine at room temperature. For example, you could add berries around the lime slices along with mint leaves or small flowers – the possibilities are endless! I kept mine simple with a half ring of lime slices and sprinkling some lime zest over the top, but you can make it as extravagant as you’d like. Once the tart is cool comes the best part – decorating.

You’ll mix your lemon and lime juice with condensed milk and egg yolks (hey, I never said deliciousness wasn’t highly caloric), and poor the filling into the cooled graham cracker crust before baking again for another twenty minutes. The filling is pretty simple too – only a few ingredients (why overcomplicate deliciousness?). Pat it around the tart pan and pop it in the oven for ten minutes while you make your filling. The graham cracker crust in this recipe is the EASIEST thing you’ll ever bake in your life! Just toss graham crackers in a food processor (I use this little mini Cuisinart food processor and I’m obsessed) with some melted butter and you’ve got yourself your crust mixture. The texture is almost like a custard – it’s so smooth and delectable! For this recipe I used mostly lime juice with a little lemon juice thrown in for extra tartness. It’s a sweet and sour combo that tastes so good with the graham cracker crust.

You don’t have to make frosting or anything, just a crust and a filling, and voila – dessert! Tarts are wayyy easier and quicker to make than cakes (and in my opinion, just as pretty). Tarts are one of my go-to desserts because they’re SO easy and they look beautiful. So, with summer on the horizon I was inspired to make my own recipe.
